Mix I – this my preferred mix for yeast breads, loaf cakes, white and chocolate cake and most cookies. This flour mix is good for baked items that you like to be a bit moist.
1200 grams white rice flour -Asian kind
400 grams sweet rice flour – asian kind
400 grams tapioca starch
400 grams cornstarch
3 1/2 tablespoons Xanthan Gum (18-19 grams)
Mix all ingredients together really well. Store in air tight containers.
This is really easy to make as the Asian flours come in 400 gram bags. Works well with yeast breads, loaf cakes, cookies, pie crust etc.
Mix II – Use this mix if you prefer a dryer product.
800 grams Asian white rice flour
400 grams Asian sweet rice flour
400 grams tapioca starch
2 tablespoons Xanthan Gum
