Indonesian Pork n Peanut Sauce

Serves 4
300 grams pork, cooked or raw cut in cubes
1./2 tsp minced garlic
1/2 tsp. cumin
1/2 tsp coriander
2 tsp soy sauce
1/2 cup water
Sauce:
1/2 cup peanut butter
1 cup water
1 tablespoon lemon juice
1/4 teaspoon sambal oelek (hot sauce)
1 tablespoon brown sugar
2 tablespoons soya sauce
1 tsp. minced garlic
Curried Cabbage:
800 grams green cabbage sliced about 1/8″ to 1/4″ thick slices
2-3 tablespoons olive oil
1 tablespoon curry powder
2 tablespoons butter
Method:
In saucepan place a little cooking oil. Add the meat and lightly fry until done if using raw. Then add the garlic, cumin, coriander, garlic and water. Simmer until water evaporates, stirring occasionally.
Add the sauce ingredients to the meat. Mix well. Simmer over medium heat until stirring occasionally while making the curried cabbage. You may need to add about 1/2 cup more water to make it to sauce like consistency.
To make the curried cabbage: In wok over medium high heat add the oil. Then add sliced cabbage and stir fry for 5-10 min. Reduce heat and continue to stir occasionally until it is just getting soft. (you may add a little water and cover to cook a little longer if you prefer softer cabbage)
Add the curry powder and butter. Continue to stir over med heat until butter is melted.

To serve: Livy Method: Serve meat sauce over bed of curried cabbage. Add a little black beans for added plant protein. Or, serve meat sauce over rice or pasta with cabbage on the side. Add extra sambal oelek if you like it hot.
Notes: Chicken may be substituted for pork.
