This is an easy recipe that you can use up some vanilla ice cream in your freezer. Use either frozen or fresh sliced strawberries. I make it in a 9 x 13 glass dish but you can also divide it up into individual parfait glasses. Make sure you have enough ice cubes a day ahead of time.
Gluten Free Strawberry Parfait Dessert
3 pkgs 85 grams Strawberry gelatin
3 cups boiling water
3 cups ice cubes
3 cups strawberries, sliced
3 cups vanilla ice cream
In 8 cup measuring cup or heat safe bowl place all the gelatin powder. Add the 3 cups boiling water. Stir until dissolved. Measure out 1 1/2 cups of the gelatin. Set aside. Add ice cubes to remaining jello. Stir until it thickens about 3-4 minutes. Scoop out any remaining ice cubes. Stir in the sliced strawberries. Pour into lightly oiled glass 9 x 13 pan. Refrigerate. Take reserved jello and stir in 3 cups of vanilla ice cream. You can also mix slightly with a hand mixer. Pour over the strawberry jello mixture in glass pan. Cover and place in fridge – chill 4 hours or longer.
