Simple but tasty recipe that is easy to put together. Cut recipe in half to serve 2-3
Curried Beans and Ham Supper – serves 6
18 oz frozen green beans ( or add as much as your family eats)
3 cups chicken broth (or water and 2 cubes gf chicken bouillon)
1 small onion, diced about 1 cup
2 cups ham – sliced into strips or diced (cooked or uncooked)
1 – 2 tablespoons butter or cooking oil
1/4 cup rice flour (or regular flour if non-gluten free)
2 cups rice
3 cups water
2 teaspoons curry powder
1/2 teaspoon salt
METHOD:
In rice cooker place the rice, water and curry powder and salt. Cook until rice is done. Fluff with fork.
While rice is cooking – place butter/oil into large sauce pan over medium heat. Add diced onion and fry and few minutes. Add the sliced ham and fry a few more minutes until onions just start to turn yellow/golden. Add frozen (or even canned) beans. Stir in the flour. Add the chicken stock. Bring to a simmer. Simmer until the beans are done about 15 minutes. Serve Beans and Ham sauce over rice. Add salt and pepper to taste. A salad would make a nice side dish with this.
