Another one of my favourites from years ago easily made gluten free!
Retro Gluten Free Strawberry Jell-O Cheesecake
2 cups Mock Graham Wafer Crumbs
1/4 cup soft butter
1 egg, large
1 85 grams (3 oz) lemon Jell-O
1 cup boiling water
1 8 oz pkg cream cheese, softened
3/4 cup icing sugar (powdered sugar)
1 tsp vanilla extract
1 cup whipping cream
2 x 85 grams pkgs Strawberry Jell-O (3 oz pkg )
3 cups boiling water
Method:
Preheat oven to 350*
Mix the Mock Graham Wafer Crumbs with softened butter and egg. Press into a buttered 9″ x 13″ pan. Bake at 350* for 10-15 minutes. Let cool completely.
In small bowl pour the lemon Jello and boiling water. Stir to dissolve. Let cool until slightly thickened.
In mixing bowl mix cream cheese, sugar and vanilla extract. Whip cream until thick. Fold into the cream cheese mixture. Fold in the cooled lemon jello . You can also do this on the lowest speed of your mixer. Place pan in fridge for 2 hours uncovered.
In another bowl pout in the two packages of strawberry Jello. Add 3 cups boiling water, stir to dissolve. Cool until slightly thickened. Spread over the chilled cream cheese mixture. Keep in fridge until firm minimum 2 hours or overnight.
