Sweet n’ Sour Pineapple Meatballs

Rob and I have always enjoyed this one.  The fussy kids who do not like peppers or pineapple tend to fish those out and eat the sauce and the meatballs.

Sweet N’ Sour Pineapple Meatballs      

1 1/2 lbs ground beef
1/4 cup bread crumbs
1/2 teaspoon salt
1 egg

14 oz. pineapple tidbits or chunks
2-3 tablespoons cornstarch
1/2 cup brown sugar
1 teaspoon salt
1 1/2 boiling water
1/2 cup vinegar
1/4 cup ketchup
3/4 cup sweet pickles
2 green peppers, diced
2-3 carrots sliced
Method:

Mix together the first 4 ingredients.  Form into 1″ meatballs.  Fry in large saucepan until browned all over.  Mix together the boiling water, salt, vinegar, ketchup and brown sugar.  Pour over meatballs.  Stir.  add the carrots, peppers and pickles.  Bring to a boil, reduce heat and simmer a few minutes until carrots are crisp tender.  Drain the juice from the pineapple.  Mix with the cornstarch and pour over the meatballs.  Bring to a boil, simmer 1-2 minutes.  Add pineapple.  Stir well.  Serve over cooked rice.

Serves 6.
