8-10 chicken leg or thighs
3/4 cup chopped bread and butter pickles
1/4 cup pickle juice
1/3 cup ketchup
1/4 cup soy sauce
1/2 cup brown sugar
Place chicken in freezer bag. Mix together remaining ingredients and pour over chicken. Freeze flat.
Thaw before baking. To bake – place chicken in single layer in casserole dish. Pour sauce over top. Cover and bake at 350 for 30 minutes. Remove lid – using tongs turn meat over and bake an additional 30 minutes . Serve with rice and a salad or green vegetable. Serves 6.
** I double the sauce because we like it served over the rice.
** For freezer cooking just put the amount of chicken parts your family will eat at one meal into each freezer bag. Then mix all the sauce together in a large bowl and divide into each bag. Lay flat to freeze.
